Firstly, you can only prepare soups with dressing (borscht, cabbage soup, rassolnik) for future use.
It is better to prepare pureed soups and soups with pasta for one meal.
If this is not possible, after cooking the soup you need to quickly cool it (for example, by placing the pot of soup in a larger container filled with cold water) and put it in the refrigerator.
Experts strongly advise against leaving the soup on the stove until it cools completely. Warm meat broth is an excellent breeding ground for bacteria.
You need to reheat the soup in portions, pouring it into a small saucepan. If you reheat the soup in a large saucepan, it will spoil faster.
