Persimmons are usually eaten fresh. Those lucky ones who have them growing on their plots like apples can dry the fruit for the winter.
In harsh climates, persimmons are enjoyed only during the cold season and only temporarily. But this is no reason to give up culinary experiments.
Expert of the online publication "BelNovosti" Yulia Arkhipova - a cook, fourth-class baker told how to bake a persimmon pie.
You will need:
- persimmon 500 gr;
- sugar 150 g;
- eggs 2 pcs;
- flour 350 g;
- baking powder 15 g;
- vegetable oil 45 ml;
- lemon 1 pc;
- powdered sugar 1 tbsp.
How to cook
1. Peel the persimmon, remove the stem, skin and seeds, and pass the clean pulp through a meat grinder or chop it with a blender.
2. Beat the eggs in a separate bowl with sugar until a fluffy white foam forms.
3. Wash the lemon and grate the zest on a fine grater.
4. When ready, add the zest to the beaten eggs, pour in the vegetable oil, mix everything and, without stopping beating, add the persimmon puree.
5. Mix flour with baking powder and sift it into the finished mixture, knead the dough, slightly thicker than for pancakes.
6. Grease the pan with oil, pour the dough into it, preheat the oven to 180 degrees and bake the pie for 50 minutes.
When ready, sprinkle with powdered sugar and serve. Enjoy!
