Culinary preparations for the holiday began on Epiphany Eve. In the old days, it was considered obligatory to serve Lenten kutia, which was called golnaya, vzvar (or uzvar) and simple pastries.
Hungry kutia
It is prepared from wheat grains (2 cups), honey (1/3 cup); dried fruits and berries.
Bring water (4 cups) to a boil, add washed wheat and cook over low heat for 30 minutes, after which you can add dried fruits.
After 10 minutes, remove the kutya from the heat, let it sit in a warm place for at least an hour, and add honey before serving.
Vzvar (uzvar)
It is similar to dried fruit compote, but the technology is different.
Dried fruits (apples, pears, prunes, raisins) are first washed in cold water and left to sit for several minutes.
Then boil the dried pears for 20 minutes, after which add honey, prunes, apples and raisins.
Remove from heat and let sit in a warm place for 15-30 minutes.
Cookie
To prepare the cookies you will need flour (1 cup), eggs (2 pcs), butter (150 g), sugar (100 g), cognac (2 tbsp), vanillin, salt, cinnamon.
Knead the dough, divide it into several parts and form cookies from them. It is believed that in the old days, baked goods were made in the shape of a cross.
Bake in a preheated oven and sprinkle with powdered sugar when ready.
