You will need:
- zucchini 500 g;
- onions 150 g;
- fresh carrots 150 g;
- garlic 4 cloves;
- tomato paste 50 gr;
- sugar 1 tbsp;
- salt and spices to taste,
- vegetable oil.
How to cook
First, peel the zucchini and remove the seeds. Then cut the flesh into cubes.
Then we peel the onion and carrot. Cut the onion into medium cubes and grate the carrot on a coarse grater.
Peel the garlic and press it through a garlic press.
Heat the oil in a thick-bottomed pan and fry the onion first, then add the carrots.
When the frying is ready, add tomato paste, salt, sugar, spices, garlic, zucchini and simmer the mixture for 25 minutes.
Next, chop the vegetables with a blender, bring to a boil, add a spoonful of table vinegar and pour the finished snack into sterilized jars, or cool and serve.
