Squash caviar is not such a primitive snack as many consider it. Its taste preserves childhood memories - this is what distinguishes it from the store-bought preparation.
As for preparation, it's a piece of cake.
Expert of the online publication "BelNovosti" Yulia Arkhipova - cook, fourth-category baker told how to prepare squash caviar.
You will need:
- zucchini 1 kg
- bell pepper 0.5 kg;
- tomatoes 0.4 kg;
- onions 2 pcs;
- carrots 2 pcs;
- garlic 2-3 cloves
- salt 15 g;
- sugar 1 tsp.
- vinegar 1 tsp.
How to cook
1. Peel and cut the zucchini into medium cubes.
2. Chop the onion and fry in vegetable oil. Then add the grated carrots. Fry the vegetables until golden brown.
3. Cut the bell pepper into strips and place in the frying pan.
4. After about 10 minutes, add the zucchini and chopped tomatoes to the vegetables.
5. Stir the vegetables and simmer over low heat for 10 minutes, then add chopped garlic and spices according to the list.
6. Pass the vegetables through a meat grinder or chop them with a blender. Bring to a boil, keep on low heat for 5-7 minutes and pour into sterilized jars.
Roll up, and once the preparations have cooled, put them away for storage.
