How to fry potatoes with a crust
You can do this by rolling the potatoes in wheat flour before frying.
You need about a tablespoon of flour. You need to do the following.
Immediately before frying, place the chopped and dried potatoes in a colander, sprinkle with flour, and distribute it evenly.
You can add spices (but not salt) along with the flour. After that, you can immediately start frying.
As for salt, it must be added at the very end, otherwise the potatoes will turn into mush.
