Eggplants can be prepared both in Korean and Thai styles, although not much is known about the latter option.
Nevertheless, the snack turns out tasty, original, and easier to prepare than it seems.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told how to cook.
You will need:
- eggplants - 4 pcs.;
- cilantro - 1 bunch;
- green onions to taste;
- peanuts - 1/2 cup;
- shallot - 1 pc.;
- hot pepper - 1 pc.;
- garlic - 1 clove;
- sugar - 1 tsp;
- lime - 2 pcs.;
- olive oil;
- salt and pepper to taste.
How to cook
1. Cut the eggplants into long flat strips, rub with oil, sprinkle with salt and pepper and bake in the oven, preheated to 180-200 degrees for 15-20 minutes.
2. Roast the peanuts in a dry frying pan over medium heat. They should brown.
3. Chop the shallots, squeeze the lime juice, pour it over the onions, add cilantro, green onions, garlic and sugar. Grind in a blender until smooth.
Add salt and spices to taste.
4. Grind the peanuts, dip the eggplants in the prepared dressing and sprinkle with nut crumbs on top. Enjoy!
