Cream soup or puree soup is often made from pumpkin or tomatoes. Zucchini is not an exception and can be included in the diet and served as a first course with the same success.
Considering the dietary properties of the vegetable, you definitely won’t feel bad from this soup.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told how to cook.
You will need:
- zucchini - 2 pcs.;
- potatoes - 2 pcs.;
- onions - 2 pcs.;
- carrots - 1 pc.;
- cheese (processed) - 1-2 pcs.;
- vegetable broth or water - 500-600 ml;
- garlic - 3-4 cloves;
- fresh herbs to taste;
- vegetable oil and butter - 50 g;
- salt, black pepper to taste.
How to cook
1. In a saucepan with a thick bottom, fry the peeled and diced onion, then add the grated carrots and after a couple of minutes, the diced potatoes.
2. Then add chopped zucchini to the vegetables (remove seeds and skin if necessary).
3. When ready, pour in broth or water and bring to a boil, then cook the vegetables until done.
4. Chop the cheese, herbs and garlic and add them to the pan a couple of minutes before it’s ready, add salt and spices, then bring to a boil and remove from heat.
5. Grind the ingredients with a blender, bring the soup to a boil again and serve with croutons, garnished with herbs. Enjoy!
