No one would think of eating cold soups in the fall or any other time of year except the hot summer.
And while it’s August on the calendar, there’s still time to indulge yourself with refreshing and vitamin-rich first courses.
Expert of the online publication "BelNovosti" Yulia Arkhipova - cook, fourth-class baker told how to prepare Spanish cold soup.
You will need:
- tomatoes 1 kg;
- cucumbers 200 g;
- red bell pepper 150 g;
- purple onion 100 g;
- garlic 1-2 cloves;
- vegetable oil 50 ml;
- wine vinegar 20 ml;
- basil, salt and pepper to taste.
How to cook
1. Peel the tomatoes and cucumbers, and remove the seeds from the peppers.
2. Peel the onion and garlic and place all the prepared vegetables in a blender bowl for chopping.
3. Add vegetable oil, salt and black pepper and grind the vegetables into a smooth puree.
4. Pour it into a saucepan, add vinegar and basil and put it in the refrigerator for 2-3 hours.
Once cooled, pour into plates and serve. Enjoy!
