It’s unlikely that any of us would feel the desire to eat something heavy and hot when the sun is blazing outside.
That's why many people prefer good old okroshka in the summer. If you're already tired of this dish, then take the advice of the expert of the online publication "BelNovosti", chef Yulia Arkhipova, and prepare Spanish gazpacho - the best lunch option for a hot summer day.
To do this, you will need to go to the store with the following list of products:
- 1 kg tomatoes;
- 1 cucumber (large);
- 2 bell peppers (take red and green);
- 1/3 cup freshly squeezed orange juice;
- 1 red onion (small);
- 1 clove of garlic;
- 1 tablespoon apple cider vinegar;
- 1/4 cup olive oil;
- 1/4 teaspoon salt;
- 1/4 teaspoon black pepper;
- 1/4 cup fresh basil.
Don't be scared by the fact that the list of ingredients looks quite impressive - the cooking process will take you no more than half an hour.
First, peel the tomatoes – to make it easier, make cross-shaped cuts on them and dip them in boiling water for 30 seconds. Then transfer them to ice water – after such manipulations, you will be able to easily get rid of the skin.
Cut the tomatoes into pieces, peel and seed the cucumber, cut it into cubes. Do the same with the pepper, and chop the onion and garlic.
Now blend all the chopped vegetables with vinegar, olive oil, salt, pepper, orange juice and basil until smooth.
All that's left is to pour the soup into a large bowl and put it in the refrigerator to cool. Before serving, taste the dish and, if you think it's necessary, add more salt or pepper.
