Zucchini is often used to prepare various hearty dishes, such as appetizers and salads. They are also marinated with pepper, garlic and aromatic herbs.
At the same time, as the expert of the online publication BelNovosti, chef Yulia Arkhipova , says, this vegetable is also suitable for desserts.
For example, if you cut up a zucchini and mix it with pieces of canned pineapple, you won't feel the difference between the vegetable and the fruit.
First, you need to peel 0.5 kg of zucchini, remove the insides and cut into pieces - if the zucchini is small, you can cut it into rings.
Then start preparing the syrup – pour 400 g of canned pineapple juice into a saucepan and place over medium heat, then add 1 cup of sugar and 200 g of vanilla sugar.
It takes about 5-7 minutes to prepare the syrup, stirring it periodically.
After the specified time, place the zucchini in the pan. After 7 minutes of cooking, distribute the zucchini and 600 g of canned pineapple into pre-sterilized jars.
Pour syrup over them. Close the jars, turn them upside down and wait until they cool completely. The preserves will be ready to eat in about a week.
