Squash caviar is already a masterpiece of culinary art, a classic appetizer, and all this from just four ingredients.
It has a unique taste, beautiful texture and, in general, just the sight of it evokes pleasant memories and associations.
Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-category baker, told how to prepare squash caviar according to GOST.
You will need:
- zucchini - 1 kg;
- onion (bulb) - 300 g;
- carrots - 300 g;
- tomato paste - 70 gr;
- salt - 1 tsp;
- sugar - 1 tbsp;
- black pepper (ground) - ¼ tsp;
- vinegar (9%) - 1 tbsp;
- vegetable oil - 70 ml.
How to cook
1. Peel and grate the carrots on a coarse grater, and cut the peeled onion into cubes.
2. Peel and seed the zucchini and cut into cubes (1-1.5 cm).
3. Fry the onion in vegetable oil until translucent, then add the carrots and tomato paste and fry for another 3-4 minutes.
4. Place the vegetables in a thick-bottomed saucepan, add the zucchini and spices, salt, and simmer over low heat with the lid closed until the zucchini becomes soft.
5. Then chop everything using a blender or pass the vegetables through a meat grinder.
6. Place the finished puree on medium heat and bring to a boil, then add vinegar and remove the caviar from the stove.
Pour into sterile jars, close, turn over and leave until completely cool, then put away for storage.
