If you want to preserve the aroma and beneficial properties of garlic for as long as possible, try making garlic paste.
The recipe for a preparation that will be an excellent addition to various dishes was shared by the expert of the online publication BelNovosti, chef Yulia Arkhipova .
According to the cooking instructions, you will need:
- 1 kg garlic shoots;
- 4 tablespoons sugar;
- 2 tablespoons salt;
- 1 tablespoon lemon juice;
- 100 g vegetable oil.
Before you start cooking, wash the garlic shoots thoroughly and let them dry a little. Then grind them using a meat grinder or blender until they become a paste.
Add sugar, salt, vegetable oil and lemon juice – the last component is needed not so much for taste, but to preserve the rich green color of the paste.
Mix all ingredients well and leave the paste to sit for 20 minutes.
Then place it in pre-sterilized jars and close the lids tightly.
This additive looks organic in sauces, salads, first and second courses. It should be stored in the refrigerator, where it will retain its qualities for 2-3 months.
If you want to enjoy the taste of garlic paste even in winter, freeze it by placing it in ice cube trays.
