In its composition, the most common nettle is akin to the advertised superfood: in it you will find many vitamins and minerals, including vitamins A, K, C, group B, iron, calcium, magnesium and potassium.
It is not without reason that our ancestors used this plant to prepare cabbage soup, tea, pies and other dishes. The recipe for one of these culinary delights was shared with us by the expert of the online publication BelNovosti, chef Yulia Arkhipova .
To prepare nettle caviar you will need:
- 500 g young nettle;
- 30 ml vegetable oil;
- 1 onion;
- 1 carrot;
- 2 cloves of garlic;
- parsley and dill – to taste.
Wash the nettles thoroughly under water and cut off the thick stems, leaving only the leaves and the tops of the plants, where the stems are still thin.
After this, throw the greens into a colander and pour boiling water over them for 30 seconds – this is necessary to rid the nettles of their stinging properties.
Drain the water and heat the oil in a frying pan, in which you need to fry the chopped onion.
When the onion turns golden, add the grated carrots and chopped garlic. Fry the mixture for 3 minutes, then add the nettles to the pan and, after adding salt, continue cooking for another 5 minutes over medium heat, remembering to stir.
At this stage, you can add other herbs and spices.
All that remains is to grind our caviar to a uniform consistency in a blender bowl, after which it can be served.
