Perhaps one of the most delicious Tatar dishes is a soup with a name that is unusual for our ears: shurpa.
According to the expert of the online publication BelNovosti, chef Yulia Arkhipova , no special ingredients or supernatural efforts are required to prepare it, so why not try to treat your family to this dish?
To prepare shurpa you will need products from this list:
- 800 g lamb;
- 2-3 tomatoes;
- 3-4 potatoes;
- 1-2 onions;
- 1 carrot;
- 2 bell peppers;
- 2-4 cloves of garlic;
- a bunch of dill, parsley and cilantro;
- spices (cumin, saffron, coriander, cayenne pepper, turmeric, black pepper) and salt – to taste.
Cover the meat with water and set it to boil, and when the broth boils, cook the lamb for another 3-5 minutes, then drain the water and fill the pan with fresh water.
After this, the meat should be cooked until fully cooked – about two hours, periodically skimming off the foam.
Vegetables need to be washed and cut into large pieces. When the meat is ready, throw them into the pan - carrots, potatoes and onions.
After 15-20 minutes, you can add tomatoes, peppers and spices to the soup.
Continue cooking the soup for about 10 minutes, and after this time turn off the heat and leave it for a while to brew. Fresh aromatic herbs should be added directly to the plates.
