Mineral water

To soften the texture and improve the taste of the fish, chefs recommend using mineral water. Add a little freshly squeezed lemon juice to sparkling water and leave the herring in this mixture for 1 hour.

Beer

Some may find this method unusual, but it is worth putting doubts aside: beer. Contrary to all fears, it only improves the taste of herring. Pour 1.5 liters of beer into a saucepan, add spices (bay leaf, black peppercorns) and bring to a boil. Let the liquid cool, and then place the herring in a saucepan with beer and leave for 24 hours.

Red wine

To prepare a delicious herring appetizer, use dry red wine. Pour it into a saucepan, add sugar and spices to taste, bring to a boil and keep on the fire until the sugar is completely dissolved. Then add a little vinegar and stir.

Cut the herring into pieces, put it together with the onion rings in a jar and pour in the cooled wine. Put it in the refrigerator for a day.

Kefir

If you want to make the herring fillet more tender and give it a pleasant sour taste, use kefir. Pour it into a deep container, put the herring in there and leave the fish to “rest” for 24 hours in the fermented milk product.
