To make cutlets like in a restaurant, you need to avoid adding some of the usual ingredients to the minced meat.
Yulia Arkhipova, an expert in the field of cooking, a chef and a fourth-class baker from the online publication Belnovosti, tells us what is not usually added to cutlets in restaurants.
What they don't add to cutlets in restaurants
First, bread. It increases the amount of minced meat, but makes the cutlets tougher. Also, bread makes the minced meat darker.
Secondly, eggs. They should only be added if bread is added.
Some cooks do not refuse eggs, but use only the yolk.
Thirdly, onion. It interrupts the taste of meat. It is better to add chopped garlic, black pepper, other spices.
