During Maslenitsa week, you should definitely treat yourself to a French pancake dessert.
These would be the most ordinary pancakes if it weren’t for the thick and aromatic orange syrup.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told how to cook it.
You will need:
- eggs - 3 pcs.;
- flour - 125 g;
- milk - 250 ml;
- salt - ¼ tsp;
- butter - 100 g;
- oranges - 2 pcs.;
- sugar - 4 tbsp;
- cognac - 50 ml.
How to cook
1. Separate the yolks, beat the whites with salt until a stable foam forms, and beat the yolks with milk using a whisk, then pour in 50 g of melted butter.
2. Sift the flour, knead the dough, add the whipped egg whites, and mix.
3. Put the finished dough under film in the refrigerator for 30 minutes. Then you can bake pancakes in a dry frying pan.
4. Peel the oranges, cut into strips, and squeeze the juice from the pulp.
5. Heat the sugar in a clean frying pan and when it turns into caramel, add butter (50 g).
6. Stir, pour in orange juice and continue cooking on low heat until a thick consistency is formed. Then pour in cognac.
7. Roll the pancakes into triangles, place them in a frying pan with sauce, heat on both sides so that the pancakes are soaked with sauce, and serve with whipped cream or ice cream. Enjoy!
