But many housewives face the fact that minced fish can sometimes taste bitter. Expert of the online publication BelNovosti Yulia Arkhipova revealed the reasons for the bitterness of fish cutlets and told what to do to avoid such a nuisance.

1. The main reason for the bitterness of fish cutlets is improper cutting of the fish.

If the gall bladder was damaged during cutting, bile will get into the mince and the cutlets will taste bitter. Therefore, you need to be careful when cutting so as not to damage the bladder.

2. In addition, cutlets may have an unpleasant taste if poor quality fish mince was used to prepare them.

If you do not make the minced meat yourself, but buy it, pay attention to its appearance and smell - it should be fresh and have a pleasant fishy aroma.

3. But even if you bought high-quality minced meat, it can go rancid as a result of improper storage.

Minced fish should be kept in the refrigerator for a strictly limited time to prevent it from spoiling. If you leave the minced fish in the freezer, do not allow it to be defrosted and frozen repeatedly.

4. Another reason for bitterness may be an excessive amount of onions in the minced meat.

Onions have a strong taste and aroma that can interrupt the taste of fish and add bitterness to cutlets. Therefore, onions should be added to minced meat in moderation.

5. And finally, watch the amount of spices.

Some spices, such as black and red pepper, can overpower the taste of the fish and make the cutlets bitter. Add spices to the mince in moderation.
