The dish will turn out even better if you mix a little starch into the minced meat along with the baking soda.

For 500 grams of minced meat, it is enough to take just half a teaspoon of soda.

It is worth noting that the bulk ingredient can be omitted for minced chicken or turkey, as it is already quite tender.
