No matter how attractive the chicken on display at the store looks, it cannot compare to the flavor that a home-raised rooster can add to the broth.
The broth, prepared on the basis of domestic chicken, has an unforgettable aroma and unique taste and, in addition, is able to warm perfectly in frosty weather, which makes it a real salvation in the winter months.
Of course, all this can be said about the first course only when it has been prepared correctly – as in this article.
First, let's name the necessary ingredients. For 1.5 kg of domestic rooster you will need:
- 400 g beef;
- 1 onion;
- 1 carrot;
- 2 bay leaves;
- 5 black peppercorns;
- 3 liters of water and salt to taste.
The meat needs to be washed, covered with water and left for 3 hours. After this time, drain the water and transfer the chicken to a large saucepan, which should be filled with clean water and placed on the stove.
When the contents of the pan boil, remove all the foam and throw the bay leaf and pepper into the pan.
The rooster needs to be cooked for about 1.5 hours over low heat.
After this, add peeled vegetables (whole) and beef to the pan. Wait again until the water boils, remove the foam and continue cooking for another 1.5 hours.
You should add salt to the broth approximately 30 minutes before the end of cooking.
