You can make a wonderful forshmak or salad from herring, or simply serve it with onions and fresh herbs.
But gourmets say that in the old days, restaurants served herring butter among other cold appetizers. Let's remember how to cook it.

- lightly salted herring fillet,
- butter (82% not less),
- spices to taste.

You won't need any experience, time or effort to prepare it.
It is best to buy a whole herring for such an occasion, cut it up, remove the entrails and bones.
You just need to mix the fish with the oil, observing the proportions. About 200 grams of fish for 100 grams of oil.
The butter needs to be cut into cubes and left at room temperature for 20-30 minutes so that it becomes soft but not melted.
The herring must be passed through a meat grinder, and the resulting mass must be mixed with melted butter using a fork until smooth.
Add pepper, nutmeg or other spices to taste.
Place the oil in a glass container with a lid and put it in the refrigerator.
