Openwork pancakes with a million incredibly cute holes can decorate any table.
And when prepared according to the recipe in this article, they also turn out incredibly tender and do not turn rubbery even after they cool down.
First, let's list the necessary ingredients:
- 2 cups of flour (maybe a handful more or less – depends on the kefir used);
- 2 eggs;
- 350-400 ml kefir;
- 1 glass of boiling water;
- 1 tablespoon sugar;
- 0.5 teaspoon salt;
- 0.5 teaspoon of soda;
- 1-1.5 tablespoons of vegetable oil.
Break the eggs into a bowl, add sugar and salt and beat until foamy.
Pour boiling water into the resulting egg mixture in a thin stream. Do this without stopping the stirring movements with a whisk or mixer.
After this, pour in the kefir and flour previously mixed with soda – gradually, in parts.
All that's left is to knead the dough properly and add vegetable oil to it. Depending on whether you have free time, you can let the dough rest for 3-5 minutes, or you can start frying right away.
