Amount of water and temperature
Don't add too much water, as the puree will be tasteless. The water should cover the potatoes and rise above them by literally a couple of centimeters.
Once the liquid starts to boil, it is better to reduce the heat. If you bring the puree to readiness on low heat, the taste will be more intense.
Salt
You shouldn't cook potatoes without salt, as no one will likely like bland mashed potatoes. However, there is one peculiarity: if you add salt too early, the vegetable will become hard.
