It's no secret that prices for many vegetables skyrocket with the onset of winter, and eggplants are no exception.
For this reason, it is worth considering making preparations in the summer.
How? The answer is simple – simple freezing will help preserve eggplants for a long time.
There are just a few subtleties in this process that you should definitely take into account – otherwise the vegetables will become “rubbery” and ruin the whole dish.
So, in order to freeze eggplants for the winter, you should wash them, then dry them with a towel and cut off the green stems.
Now take a fork and make punctures in 2-3 places.
Place the eggplants on a baking tray and put them in the oven at 200 degrees. The “eggplants” need to spend 20 minutes here.
Once the vegetables have cooled, wrap each one in cling film. In this form, the eggplants can be stored in the freezer.
