First of all, the ingredients should be high-quality and fresh. It is also recommended to use eggs warmed to room temperature.
Sift the flour thoroughly through a sieve – do this an hour before cooking, which will make the pancakes airy. It is not recommended to use cold milk or kefir.
Boiling water should be added to the pancake batter, as it slightly thickens the flour.
Be sure to pay attention to the order of mixing. Add liquid to flour gradually and make sure that no lumps form.
After preparing the dough, it is better to let it sit for 20-30 minutes – pancakes should be fried in butter.
For preparation we use 350 ml of milk, 150 ml of boiling water, 2 eggs, 25 g of sugar, 0.5 teaspoon of salt, 25 g of vegetable oil and 200 g of flour.
