Any dish made from new-harvest potatoes will be 10 out of 10, if you take into account some subtleties of preparation.
This won't work with old tubers, but it's easy with young ones. There are only two rules that are important to know before preparing new potatoes.
Peel
There is an ongoing debate among chefs about whether or not new potatoes should be peeled.
The argument against using a knife or peeler is that tubers cooked in their skins retain a special flavor and texture.
Peeled potatoes absorb water and cook faster. If the skin is not removed before cooking, the tubers must be thoroughly washed.
Cooking time
If the tubers are large, they will cook in 20 minutes at most. If we are talking about small potatoes, they will need even less time – 15 minutes.
5 minutes before it is ready, you can throw a clove of garlic into the pan to give the dish a piquant aroma. It is better to serve the garnish with dill and a piece of butter.
