To prepare a casserole, it is not necessary to use semolina and wheat flour - this way the dish will turn out especially tender and soft.
What can replace these ingredients? Of course, rice flour. So, you will need:
- 700 g cottage cheese;
- 100 g sugar;
- 30 g rice flour;
- 3 eggs.
Combine cottage cheese, eggs and sugar in one container and, using an immersion blender, make the mixture as homogeneous as possible.
After this, you should add flour and work with the blender again.
Now you can safely pour the dough into a baking dish and place it in an oven preheated to 180 degrees.
The exact baking time depends on the size of the pan and the height of the curd layer – for a pan with a diameter of 18 cm, it will take 30 minutes.
In the meantime, you can prepare the cherry sauce. 200 g of cherries (you don’t have to defrost them) should be heated over low heat.
When warm steam starts to come out and the berries start to release juice, pour in 50 g of sugar and 7 g of starch mixed together and wait until the sauce boils, stirring constantly. Keep the cherries on the stove for another 30-60 seconds so that they thicken, and leave to cool.
All that's left to do is to grease the casserole with cherry sauce and it's ready to serve.
