Pelmeni are an ideal preparation. They are always at hand when there is no time to cook, and they cook very quickly.

This is a great option for Lent, as you can make preparations with different fillings that even children will like.
Vegetable filling
Pour vegetable oil into a frying pan and fry the onion until a pleasant aroma appears. No need to wait until the pieces are browned, just until they become a little soft.
At this time, add the grated carrots. When the carrots are lightly fried, throw the bell peppers, cut into strips, into the pan. Leave the vegetables to stew under the lid.
If you use frozen peppers, a lot of moisture will form in the pan. You need to open the lid to let it evaporate. Add salt and pepper to taste, and add chopped garlic.
All vegetables are taken in any quantity.
Fish filling
For the filling, you need to prepare minced fish. Put the fish fillet (you can take any, to your taste) through a meat grinder or chop finely with a knife. Add finely chopped onion, black pepper, salt. If you put the fish through a meat grinder, chop the onion along with it.
If the mince is very runny, add some white bread, bread crumbs or a loaf of bread to absorb the excess moisture. But do not overdo it, otherwise the filling will become very dry.
Potato filling
Boil the potatoes until done. Heat the sunflower oil in a frying pan and fry the onion until golden brown.
Mash the potatoes and fry with onions. Add salt and spices to taste.
It is easy to roll balls from potatoes and fill dumplings with them. You can fry spices together with onions. This way they will reveal their taste and aroma to the maximum.
Mushroom filling
For the mushroom filling, you can use any mushrooms – fresh or frozen, champignons from the store or wild mushrooms collected yourself.
Wild mushrooms should be pre-boiled as you usually do, and then minced. You can boil and finely chop dried mushrooms.
Fry the onion in a frying pan until golden brown, add the mushrooms and fry until done.
If you like the sweet taste of carrots combined with mushrooms, you can add them too. Spices and salt are added to taste.
Important: if the mushrooms were frozen, they will release a lot of liquid, so you need to fry them in an open frying pan to allow the water to evaporate.
If you don't know what kind of dough to make, use the simplest recipe based on flour and boiling water. 650 g flour, 1 teaspoon salt, 350 ml boiling water, 2 tablespoons vegetable oil.
Mix the ingredients, knead the dough, leave it for 20-30 minutes to swell the gluten. After that, roll it out and make dumplings.
