Birch sap is sold all year round, but the problem is that the store-bought product contains a lot of sugar and preservatives.
At the same time, no one is stopping you from rolling up a couple of jars, and with any flavor additives. Here's how to do it without preservatives and boiling.
Here is the most simple and healthy recipe for preparation.
To prepare you will need:
- 5 tbsp. sugar;
- raisins - 10 pcs.;
- lemon.

If it so happens that pure sugar has long been excluded from the diet, it can be replaced with honey. This recipe is designed for rolling up three liters of birch sap.
It is also worth knowing that the later the juice is collected, the less sugar it contains.
First of all, the juice needs to be strained through cheesecloth.
Raisins are washed, dried, and added to juice along with sugar (honey) and citrus fruits or dried zest.
Mix everything, cover the jar with a dry cloth and leave for 24 hours at room temperature.
During this time, the juice should steep, after which it remains to pour it into sterilized jars, roll them up and store them in a cool place - a cellar or in the refrigerator.
In this case, the shelf life will be 6 months.
