Honeysuckle is the very first berry that appears in gardens in the spring, and if you are lucky enough to collect a rich harvest, you can try to cook something with this berry.
There are a lot of recipes, for example, for jams and jelly, but baking is much more fun, for example, shortbread pie with cottage cheese and honeysuckle.
To prepare you will need:
- 250 g flour;
- 150 g butter;
- 160 g sugar;
- 1 tsp baking powder;
- 70 g walnuts;
- 200 g cottage cheese;
- 2 eggs;
- 50 g sour cream;
- 300-400 g of berries.
How to cook
Mix the flour with the baking powder and sift, then add the cubes of butter and rub the mixture with a fork until crumbs form.
Now you can add the egg and sugar, chopped walnuts and mix until smooth.
The resulting dough needs to be rolled into a ball, wrapped in film, and left in the refrigerator for 30 minutes.
At this time, you need to rub the cottage cheese through a sieve, mix it with sour cream, egg and sugar, and then beat with a mixer.
Roll out the dough and place it in a form greased with vegetable oil. It is necessary to form a rim. Its height should correspond to the volume of the filling.
Then we put the berries on top and cover them with the curd filling.
Preheat the oven to 180 degrees and bake the pie for 40-45 minutes.
