Pilaf is usually made from rice, but no one is stopping you from looking for alternatives, such as using pearl barley.
They say that it turns out just as good, and you can cook pearl barley with both meat and mushrooms. The latter recipe will definitely be appreciated by those who fast and ordinary vegetarians.
To prepare you will need:
- 1 cup pearl barley;
- 2 tbsp butter (margarine);
- 1 onion;
- 2 stalks of celery;
- 400 g mushrooms (champignons);
- 1 cup broth (chicken or vegetable);
- 1/2 tsp salt;
- ground black pepper, dried thyme, parsley - to taste.
How to cook
Fry the soaked pearl barley for 4 minutes in a thick-bottomed saucepan or deep frying pan, stirring constantly. Pour the cereal into a bowl.
Then melt the butter (margarine) in the same pan and fry the onion cut into half rings over medium heat, then the chopped celery and cook for 10 minutes.
When the vegetables become golden, add the mushrooms, cut into thin strips.
Lightly fry and add pearl barley, a glass of broth and 2.5 glasses of water. Then add salt and spices.
After the liquid boils, reduce the heat to low and simmer for 30 minutes under the lid.
Before serving, add parsley and stir.
