Raw rice contains bacteria of the Bacillus cereus species, which cause food poisoning in humans.

They penetrate the grain from the soil and actively multiply in boiled rice if it is not eaten and left for the next day.

Therefore, boiled rice cannot be left at room temperature the next day.

Storing cooked rice in the refrigerator is considered safe.

Otherwise, the grain can cause poisoning, which manifests itself as vomiting, abdominal pain and diarrhea.
