Many housewives will agree that sometimes it is extremely difficult to cook eggplants.
One awkward movement is enough - and the vegetables turn into real mush. It is unappetizing, the dish is spoiled and the eggplants themselves will have to be thrown away.
However, Eastern housewives have come up with a simple trick that will simplify the preparation of eggplants.
The task would be easier if you leave the skin on the eggplants, but then the dish will be bitter. If you remove it completely, the vegetable will lose its shape when baked.
Some housewives cut off part of the peel, cleaning the product in a "zebra" pattern. The pulp alternates with the peel. After this, you can stuff or cut the eggplants - the vegetable will not fall apart and turn into mush.
The bitterness of the fruit can be eliminated with another trick. Eggplants are cut into rings or slices. The width of the pieces is 0.5-1 cm.
Sprinkle the slices with salt and leave for 15-20 minutes. After a quarter of an hour, liquid will appear, along with which the bitterness will come out. All that remains is to wash the slices. It is important to use coarse table salt for this. Fine "extra" and sea salt are not suitable for this task.
