The fact is that low temperatures affect the tubers in a certain way: the structure of the vegetable changes.
Potatoes that have survived both freezing and cooking in the oven turn out perfect.
An expert of the online publication Belnovosti in the field of cooking, chef, and fourth-class baker Yulia Arkhipova spoke about an unusual and little-known effect.
Select several medium-sized tubers, wash them, peel them and place them in a pan of boiling water.
At this stage, there is no need to bring the vegetable to full readiness: the duration of "partial cooking" is 7 minutes. The fire should be strong.
Once the time is up, drain the water. Don't rush to put the tubers in the freezer: they need to cool down.
When the potatoes are cold, place them in a plastic bag and place them in the freezer.
When you feel like eating a baked potato, take the vegetable out of the freezer.
Once the tubers have thawed, coat each one with a thin layer of vegetable oil.
Next, take a baking sheet, put parchment paper on it and put the potatoes in. Don't forget to use spices.
The baking time for potatoes should be 50 minutes. Temperature - 190 degrees.
The dish will turn out gorgeous: crispy golden crust, incredibly soft and tender “filling”.
The first effect will be achieved due to the appearance of a microlayer of moisture during freezing, and the second effect - due to the breakdown of starch under the influence of low temperatures.
