Boiled chicken in Olivier can be successfully replaced with smoked chicken. As a result, the salad will acquire an unusual but pleasant flavor, and the dish will sparkle with new flavor notes.
Some chefs recommend using fried meat instead of boiled meat in the Olivier salad recipe. You need to fry pieces of pork (beef or chicken) with salt, pepper and spices, then cut them into cubes and add to the salad.
