Are you unable to make airy and tender pancakes, despite using soda or baking powder?
Perhaps the problem is the lack of preliminary “processing” of kefir.
Are you adding cold fermented milk drink to the dough? This is a big mistake!
Do you take a bottle of kefir out of the refrigerator in advance so that you can use room temperature liquid when making pancakes?
This, oddly enough, is also the wrong action.
The expert of the online publication Belnovosti in the field of cooking, cook, fourth-class baker Yulia Arkhipova emphasizes: kefir must be heated.
Before adding kefir to the egg mixture, pour the drink into a cup.
Important: the container must be microwave-safe. After all, your task is to heat the white liquid in the microwave.
There are no specific recommendations for the duration of warming up.
But here's some advice: turn off the microwave after the first gurgle of kefir.
If you heat the drink for too long, it may become flaky.
Mix warm kefir with the egg mixture (to which salt and sugar were previously added), stir and add the remaining ingredients: sifted flour, baking powder.
Leave the dough "alone" for half an hour.
The result will be a base from which you can make gorgeous pancakes: fluffy, soft and delicious.
For reference
Pancakes are flour products baked (fried) from yeast dough in a frying pan.
