The ingredient that deprives Olivier of its bright flavor

There is a popular misconception that it is perfectly acceptable to add pickled cucumbers to Olivier salad instead of salted ones.

It is this mistake that deprives the salad of its appetizing effect.

Never use pickled cucumber as an ingredient for Olivier salad!

Because of this component, the dish loses its bright taste. The unpleasant effect is explained by the presence of vinegar, which interrupts the taste of meat, peas, potatoes and eggs.

Add only pickled cucumbers to Olivier salad: they do not add any “vinegariness”.
