This happens because potatoes tend to darken. This is not a problem at all, you just need to know what product to add to the pancake mixture.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told us what to add.
For potato pancakes, it is better to take starchy tubers - "Aurora", "Skarb" and others. However, they darken quite quickly after grating the potatoes.
But this can be avoided by adding one tablespoon of fresh lemon juice.
If you don't have lemon, apple cider vinegar will do.
The ingredients are not added to the completely prepared mass, but only to the chopped potatoes.
The mixture needs to be left to sit, after which the excess potato juice needs to be drained and you can continue cooking.
You can also add grated onions to the potatoes to prevent the potatoes from changing color.
In addition, housewives add grated zucchini, pumpkin, carrots or fresh herbs to the mixture for potato pancakes.
