In the old days, people cooked shchi not only because they didn't really know how to do anything else. Firstly, it was tasty, secondly, it was healthy, and thirdly, it was accessible and simple.
Today housewives are able to make a cream soup from any vegetable – if only they had a blender. But questions may arise about shchi.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told how to cook real cabbage soup.
1. Pour 2.5 liters of water into a saucepan and set it to cook the meat.
2. Chop the onion and carrot and fry in a frying pan with vegetable oil.
3. Next, add the diced tomatoes to the frying pan.
4. When the meat is ready, add whole peeled potatoes (2 pcs.) and cabbage. It is believed that sauerkraut is used for the classic recipe.
Cut the remaining potatoes into cubes and add to the pan 20 minutes after adding the cabbage.
5. After 20 minutes, add the fried mixture to the pan, take out the boiled whole potatoes, mash them into a puree, and then add them back to the pan.
6. Add herbs and garlic, salt and spices, bring to a boil, turn off, let it brew and serve. Enjoy!
