Ideal corn should be soft, juicy and have a slight sweet taste.
What should a gourmet do if he was unable to buy young ears of corn?
What to do if the corn turns out to be old?
Fortunately, it's very easy to keep these cobs from becoming too hard when cooked.
It is enough to properly prepare overripe corn for heat treatment.
A useful trick was shared by the Belnovosti online publication's expert in the field of cooking, chef, and fourth-class baker Yulia Arkhipova.
First, the cobs must be cleared of leaves.
Then the corn should be placed in a deep, but not very wide container and filled with milk diluted with plain water (for one volume of white drink there should be one volume of clear liquid).
The cobs should sit in this mixture for 4 hours.
After the procedure is completed, the corn should be boiled in the standard way. If we are talking about old corn, then the treatment in boiling water should continue for one and a half to two hours. Mature cobs can be boiled for half an hour, and young ones - 20 minutes.
The finished dish can be rubbed not only with salt, but also with softened butter: it will turn out even tastier and softer.
