As a rule, chefs use smoked pork ribs when preparing this dish.
But this is not the only option: you can also try cooking the first course by throwing smoked lard and smoked chicken into the pan (you can use any part of the bird, even wings, legs or tails).
The lard and chicken should be covered with water and put on the fire. It won't take much time, because these products are already ready.
During the cooking process, the smoked ingredients will impart their flavor and aroma to the broth.
At the end of cooking, you will need to remove the chicken and smoked lard.
Cut the lard into cubes and remove the meat from the chicken bones, after which you can return these products back to the pot with the soup.
Thanks to these culinary tricks, pea soup acquires a rich taste and smoked aroma.
