How to pickle asparagus for the winter: this appetizer will even push aside pickles

Asparagus does not spoil your figure, and you can grow it without much effort in your garden.

Most people think that only white asparagus can be pickled. But green asparagus is just as good.

Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to marinate asparagus for the winter.

You will need:

  • asparagus (green) - 400 g;
  • salt - 0.5 tbsp;
  • water - 350 ml;
  • garlic - 2 cloves;
  • vinegar (5%) - 80 ml;
  • mustard (seeds);
  • peppercorns;
  • sugar - 1 tbsp.

How to cook

1. Young asparagus shoots are best for this. Old ones need to be prepared - remove the dense stems at the base of the plant.

The stems are cut lengthwise so that they fit into the jar. Then they are poured with boiling water for 1-2 minutes, after which the water is drained.

2. The garlic needs to be peeled, but not chopped.

3. Prepare the marinade: add vinegar, salt, sugar, peppercorns to the water, bring to a boil, but do not boil.

4. Place garlic, 1 teaspoon of mustard, asparagus sprouts in the jars and pour in the marinade.

5. Place the jars in a saucepan with hot water and sterilize the preparation for 10-15 minutes.

Close the lids, leave upside down, cover with a towel and leave at room temperature until completely cool.

Store in a cool, dark place.
