Every housewife has her own recipe for okroshka, which she probably got from her mother or grandmother.
Despite the fact that there is no universal instruction for preparing this dish, all the recipes have something in common, namely a number of ingredients that will be superfluous in okroshka.
Yulia Arkhipova , an expert of the online publication BelNovosti and a chef, shared a list of products that should not be included in okroshka, as they can spoil the dish.
For many people, potatoes are an essential part of okroshka, but if you look at the original recipe, there were no boiled tubers. Or rather, not so – it was customary to serve potatoes separately.
No one argues – it is much faster to prepare okroshka with sausage than to use boiled or fried meat in the process. But in the latter case, the dish will definitely be tastier. An important nuance: the meat should not be cut, but separated into fibers.
Traditional okroshka is supposed to use sour kvass. If you don't want to make kvass yourself, make sure the label says that the drink is okroshka, non-carbonated, naturally fermented. Regular kvass will most likely ruin the dish.
Instead of mayonnaise or sour cream, which will negatively affect the taste of okroshka, it is worth using a dressing of ground egg yolks with mustard and horseradish added to them.
