How to Make Homemade Cream Cheese Quickly: No More Freezing Kefir

One of the popular culinary life hacks with kefir allows you to make delicious cream cheese.

It turns out not much worse than the industrial product, but it is noticeably cheaper. The only inconvenience is that you need to freeze the kefir in advance.

Expert of the online publication "BelNovosti" Yulia Arkhipova - a cook, fourth-class baker told how to prepare this product even faster.

You will need:

  • sour cream (25-30% fat) 400 g;
  • Ryazhenka (3.2%) 400 g;
  • kefir (3.2%) 400 g;
  • salt to taste;
  • lemon juice 1 tbsp.

How to cook

1. Mix sour cream, fermented baked milk and kefir in a bowl, then add salt and lemon juice.

2. Mix until smooth.

3. Line a colander with several layers of cheesecloth and place it over a saucepan or deep bowl.

4. Transfer the fermented milk mixture into a colander and wait until all the whey has drained.

5. Collect the curd mass in gauze, roll it up, and put it under a press for several hours.

We use the finished product to make creams or sandwiches. Enjoy your meal!
