But you shouldn't overdo it either, as too fatty meat can negatively affect the taste of the cutlets. Therefore, before grinding in a meat grinder, it is recommended to remove large pieces of fat from the meat along with the veins.
Thanks to bread, it is possible to make cutlets fluffy and airy. In addition, this ingredient has the ability to absorb excess moisture, which means that the cutlets will not fall apart during frying.
Before adding the bread to the other ingredients, it is worth soaking it. Usually, water, milk or cream are used for this purpose.
It is believed that this product helps to glue all the ingredients together and prevent the cutlets from falling apart.
In fact, it’s the other way around – the egg in the cutlets makes them tough and dry.
