"Sandwich"

For this method, the prepared filling is placed on an eggplant circle about 1 cm thick, covered with a second circle and fried. For frying, try using sesame oil with the addition of garlic.

If you want to get a crispy crust, then before frying you should roll each eggplant circle in starch.

"Little boat"

In this case, the vegetable is cut lengthwise into two halves, some of the pulp is removed and chopped. Then the chopped pulp is mixed with the filling (for example, with minced meat, but make sure that it is already ready by this time) and the resulting mixture is filled into the eggplant halves.

Then you can add sauce – soy sauce will look harmonious – and put it in the oven.

"Cups"

The eggplants are cut into circles about 5 cm wide, some of the pulp is removed with a spoon and filled with filling - for variety, try minced vegetables.

The circles are then drizzled with sauce (soy or oyster) and rolled in starch before being fried in a frying pan.
