Expert of the online publication BelNovosti, chef Yulia Arkhipova, shared several signs that will help determine the quality of meat – be it pork, beef or poultry.

Color

Fresh meat has a color from bright pink (chicken) to dark brown (beef). Any gray inclusions or stains are unacceptable.

If the meat is bone-in, the bones should be white, as should the joints. Fat can be yellow or almost white.

Smell

Fresh meat should not have a strong smell - only some varieties may have a slight milky aroma. If there is an unpleasant or strange smell, this indicates that the process of decomposition has begun.

Structure

Among the characteristics of fresh meat are elasticity and density. Conduct a small test by pressing on the pulp. If the dent disappears immediately, then the product is of good quality.
