Is onion a mandatory ingredient in Olivier salad? This question has long been asked by many gourmets.

Some chefs believe that the onion component should be present in the dish.

Others are sure that onions have no place in a salad, since their sharp taste does not go well with the aroma of the other ingredients.

However, experienced chefs have finally put an end to a culinary dispute that has lasted for decades.

The answer is as follows: “It is still worth adding onion to Olivier. But not raw or scalded.”

What to do with onions before adding to salad

It is clear that the vegetable needs to be freed from excessive bitterness.

But you shouldn’t achieve the desired result by pouring boiling water over the bulbs, as this procedure may make the ingredient less than appetizing.

But you need to marinate the onion. It is enough to pour the diced vegetable with table vinegar, strongly diluted with water. You need to add a pinch of salt and sugar to the liquid.

The marinating process should last a quarter of an hour or a little more.

The result will be an onion that is freed from bitterness and has a pleasant aroma. Olivier with such an ingredient will be incredibly tasty.
