Do not add softened or slightly cold butter to the egg mixture.
You need to make sure that the product is very cold and hard.
Therefore, you need to do the following: put the butter block in the freezer in advance, remove the product right before you start making the omelette, chop some of the frozen butter with a grater, and pour the resulting “shavings” into the egg mixture.
The prepared mixture should be poured onto a heated frying pan. The omelette will quickly get rid of excess moisture, which does not happen if there is milk in the mixture.
The finished dish will be distinguished by its golden brown color, moderate dryness and very bright taste.
